Dried Shiitake Grading Explained — Flower, Thick, Sliced and More

Flower vs Thick vs Sliced vs Diced — what each grade is, what it costs roughly, and which food applications fit each format.

“Just send me a sample of dried shiitake” is the most common new-buyer request — and the one most likely to result in mismatched expectations. Dried shiitake comes in at least five distinct grades, each fitting a different application and price point.

Flower Shiitake (花菇)

Cap size 3-6 cm; signature white star-shaped cracks on deep brown cap. Best for high-end retail, gift packs, hotel/restaurant supply. Highest price tier — typically 2-3× the price of standard whole shiitake.

Thick Shiitake (厚菇)

3-5 cm thick dense caps without visible cracks. Best for vegan meat alternatives, soup bases, ready meals where texture matters more than visual presentation. Mid-high tier.

Sliced Shiitake (切片)

0.3-0.5 cm uniform horizontal slices. Best for instant noodles, soup mixes, rice toppings. The highest-volume export grade. Mid tier.

Diced Shiitake (颗粒/丁)

0.5-1 cm cubes. Best for dumpling fillings, sauce manufacturing, seasoning blends, baby food. Mid tier.

Strips (条)

~0.5×3 cm. Best for hotpot ingredient packs, stir-fry kits, Asian snack products. Mid-low tier.

When requesting a quote, always specify both grade AND target specification: “flower shiitake 3-4cm, moisture ≤13%, broken rate ≤5%” gets you a real price; “high-quality shiitake” gets you a ballpark.
